Energy-Filled Chia Oatmeal
I'm always on the hunt to explore new ways of doing something classic differently and to make sure my family doesn't get bored of the same thing. This Oatmeal recipe is absolutely delicious. And deceivingly simple. It’s also versatile to make with dairy or dairy-free.
Yield 6 servings
3 cups water
3 cups milk of choice (I used sweetened Oat Milk)
1.5 cups rolled oats
3 tablespoons chia seeds
3/8 teaspoon sea salt
1 1/2 teaspoon pure vanilla extract
3/4 teaspoon cinnamon
*choice of toppings: blueberries, strawberries, slivered almonds, banana, apple, walnuts, etc.
In a large pot, add water and milk over medium-high heat. While the liquid is heating up, take out all the other ingredients and add all except for cinnamon. Whisk (so chia doesn't stick in clumps) and bring to simmer, reducing heat to medium-low so the liquid doesn’t boil over. Cook on simmer until oats are softened, ~10 mins. Stir/whisk regularly.
Add cinnamon and whisk until all cinnamon is mixed. Simmer for another couple of minutes to fuse all the flavours.
Add toppings and enjoy!
Leave left-overs in fridge and enjoy cold, or reheat and simply add a little water or milk to get it creamy again.
